Creole Red Beans and Rice is one of my favorite dishes. And for the quantity the standard recipes yields, it's pretty cheap. I made a batch last night using Chuck Taggart's Red Beans and Rice recipe.
The last time I featured this on my blog I used fried tempeh for a "bacony" flavor, but tight budget = no frills.
